Its Wealth out of Waste recipe !! NOT waste literally, but this is made with the leftover Chapathis by re-creating a new dish !! It is almost similar to idly fry, bread upma.
Sometimes (very rarely though) chapatis or rotis get carried forward to the next day in my house, i do not throw them away, but use it for breakfast as this dish is light yet filling. Let me tell you in a jist, cut the rotis into pieces (square), prepare the onion-tomato masala. When its half done add the roti pieces to it & toss it well, so that the roti pieces are coated with the masala & the flavour gets absorbed.
Lets get to this quickie recipe.
Ingredients :
Roti (4-6 nos) : cut into square pieces
Onion - 2 med sized chopped finely
Tomato - 1 big chopped finely
Ginger-garlic paste - 1 tsp
Red chilly powder - 1/2 tbsp
Coriander powder - 1/4 tbsp
Garam Masala - 1/2 tbsp
Oil - 2 tbsp
Mustard - 1/4 tbsp
Jeera - 1/2 tsp
Salt - to taste
Turmeric pdr - 1/2 tsp
Curry Leaves - 1 sprig
Coriander leaves - for garnish
Method :
1. In a pan, heat oil, add mustard jeera and curry leaves. Let it splutter.
2. Add the onions and ginger-garlic paste, saute until the raw flavour disappears.
3. Add the tomatoes & allow it to cook until semi dry curry. you may just sprinkle water in between. Add the turmerice pdr, coriander pdr, red chilli pdr, garam masala & Salt.
4. Add the roti pieces and toss it well. Let it get coated by the masala
5. It will start turning slightly crispy, at this stage turn off the gas.
6. Garnish with coriander and Serve hot with yogurt or onion raita.
