Lemon Rice / Elumichai Sadham

Lemon Rice, one of the most popular South-Indian dish and oftenly prepared rice item. It comes to handy when you are in a time crunch or unwell. This is an easy lunch box recipe. 

Lemon Rice 
Ingredients :

Cooked Rice - 1 cup
Lemon Juice - 1.5 - 2 tbsp
Salt - to taste

For Seasoning or Tadka :

Oil - 1 tbsp
Mustard Seeds - 1/2 tsp
Chana Dal - 1/2 tsp
Urad Dal - 1/2 tsp
Curry Leaves - 1 sprig
Green Chillies / Red chillies - 2 nos
Hing - 1 pinch
Grated ginger - 1/4 tsp
Turmeric - 1/2 tsp

Method :

1. In a pan/kadai, add oil. When it is medium hot add the mustard seeds and let it splutter.
2. To it add hing, chana dal, urad dal, green chillies, curry leaves and give it a quick sautee.
3. Cook all these on low flame, ensure the lentils don't get burned.
4. Switch off the flame, add lemon juice and salt to the mixture
5. In a wide mouthed bowl or plate, spread cooked rice. Add this into the cooked rice and gently mix or toss well with a fork so that the rice doesn't become mushy
6. Serve hot with appalams or vadams or curry of your choice.

Tastes Best when served with potato fry and appalam / vadams.
