Vendakkai mandi/ Okra fry in tamarind sauce

Okra/ vendakkai/bendakkaya is vegetable that most kids don't like because of their slimey nature, I remember as a kid my Mom used to say " You would get good in Numbers only if you eat Okra", so we kids gulp them , but kids will love it you roast it very well o they can even take it as a snack.

This recipe was shared by my friend Mrs.V, and it was very simple to make.

Ingredients:

500 gms okra
2 potatoes, cut
1 chopped onion
1   1/2 tbsp of oil
1/4 tsp methi seeds
1/4 tsp of urud dhal
1/4 tsp of mustard
1/4 tsp turmeric powder
1 red chilli
1 green chilli
lemon size tamarind
1 cup mandi or rice washed water
salt to taste
                               




Method:


  • Wash rice( can be 1/4 cup) well and add some water and soak it for half hour and drain the water( this is mandi) and soak tamarind in that water.
  • Heat  1/2  tbsp of oil in a pan and fry okra, cook till it is half done and remove it from pan .
  • In the same pan add oil , tip in mustard once it splutters add urud dhal, methi seeds, chillies, toss it well and tip in  onion cook till translucent 
  • Add chopped potatoes and cook it half crispy.
  • Now add the okra, turmeric powder and toss it well.
  • Now add the drained tamarind water to the okra-potato , add salt
  • Cook in simmer ,covered ,till it gets thick and saucy.
  • Serve it with rice.
