Peanut / Verkadalai sundal


You might be wondering why I posted this easy, known-to-all dish.

Well, peanut sundal is very easy to prepare and peanuts is full of dietary protein, rich in energy and essential nutrients that is required for everyday growth & development. Due to the increasing busy life, we tend to forget such easy-nutrition packed snacks and opt the easily available store goodies. I remembered that I forgot to include proteins for a week now, hence made this !!

My grand-ma used to make this sundal for me when I was in school and had many a times narrated the benefits of this nut. although, you should not consume the uncooked version, might lead to stomach uneasiness. Here's the recipe.

Wash & cleanse the peanuts. Soak 1 cup of peanuts for 1 hour. Pressure cook it for 4-5 whistles in a cooker.

Cook with with 1 1/2 cups of water in the cooker such that it is crunchy and well-cooked.

Ingredients :

Peanuts : 1 cup
Grated coconut : 1/4 cup (optional)
Cumin seeds for flavour
Salt

To temper : 

Mustard seeds : 1 tbsp 
Bengal gram (kadala paruppu) : 1 tsp 
Cumin seeds : a pinch  (optional)
Red chillies : 1 long
Curry leaves : 1 sprigs
Hing :1/4 tsp
Tumeric (optional, i like a pinch of it in all my preparations, antioxidant right !!)

Method : 

1. Heat oil in a wok, add the ingredients listed under "To temper" and sauté. 

2. Toss the pressure-cooked peanuts to the wok & allow it to blend in with the spices for a minute.

3. Add the grated coconut & toss well. Remove from flame & serve.
