Soupe Au Pistou

Its my version of this french pistou soup ,  its Provence summer soup generally with  beans and veggies  with pistou added over the soup when served.

Ingredients:
1  onion frinely chopped
 3 cloves of garllic
1/2 cup of tomato puree
1/2 cup of french beans
2 carrots diced
1/4 cup brocolli heads
1 celery stalks, chopped
1/2 cup cannelini beans or cranberry beans
1/2 cup peas
 1 tbsp of pasta
2 tbsp of olive oil
2 -3 sprig of thyme+ oregano
stock a litre

For PISTOU

1 cup basil leaves
4 cloves of garlic
1 tbsp of parmesan cheese
1/4 cup cup olive oil

Method:

  • Add garlic, basil ,olive oil in a processor blend till smooth, then add grated cheese , blend it to a smooth paste to make a pistou
  • For soup add olive oil in a pot add saute onion, then add the garlic cook till onion is transparent.
  • Add tomato puree.
  • Add in veggies and cook till it is soft.
  • Tip in beans and add the stock and boil for half -an- hour .
  • Add the frozen peas, pasta and cook till beans becomes soft.
  • Sprinkle thyme and add a spoon of pistou, serve it with  bread.
