Kheer or payasam is a sweet made with rice, vermicilli, sagoo, flattened rice sugar or jaggery and condensed milk. Today I made with broken wheat, milk and sugar, this is a kerala recipe, generally they use jaggery instead of sugar.
Cooking time: 30 minutes serves: 4-5
Ingredients:
1 tbsp of ghee
1 cup of broken wheat
2 cups of water+thin coconut milk
1 cup of milk(normal milk)
1 1/2 cup of coconut milk
4 tbsp of sugar
1 tsp of cardamon powder
1/2 tsp of nutmeg powder
1 tsp of raisins, almond for garnish
Method:
then add some more water to the grated coconut and extract juice, which would be thin coconut milk, it would be more watery.

Method:
Extracting cocnut milk:
Grate one coconut and blend it in processor and extract juice.then add some more water to the grated coconut and extract juice, which would be thin coconut milk, it would be more watery.
Kheer
- Roast the broken wheat in 1/2 tbsp of ghee till golden brown
- Boil wheat in 2 cups of water+ thin coconut extract and 1/2 cup of normal milk.
- Once it is boiled add half cup normal milk , stirring.
- Add sugar to the boiling mixture.
- Once it getting thicker add thick coconut milk , stirring , cook in simmer
- Add cardomon powder, nutmeg powder.
- Cook for another 5-7 minutes or until it becomes kheer consistency
- Heat ghee and fry raisins, almond and garnish the kheer
