Panipuri is the most common chat item in India, in most of the street corner you would find a gol gappa guy.
This is a quick chat if you have already prepared the puris. Pani is water , here we have two spicy water one is mint and spices or jaljeera made with cumin and spices and the other kind is sweet and tangy made with dates, tamarind and spices.
For the fillings generally they would give potatoes(boiled) with sprouts, or potatoes(boiled) with peas, but I have used boiled potatoes with onion
Crack the puris in the top and fill it with potatoes then add spiced water or the tangy sweet water and consume it immediately, otherwise it will become soggy.
Ingredients:
PURI :
1 cup semolina
3 tbsp of all purpose flour
baking soda -1/2 tsp
oil for deep frying
Filling:
4-5 potaotes
1 chopped onion
1 tsp of cumin powder
1 1/2 tsp of chat masala powder
1 tsp of black salt
4 sprigs of coriander leaves chopped finely
METHOD AND INGREDIENTS FOR SPICY WATER:
Spicy water
1 bunch of mint leaves, chopped
1/2 bunch of corriander leaves, chopped
1-2 grren chilli
1/2 tsp of tamarind paste
1 tsp of cumin powder
1 tsp of chat powder
1/2 tsp of kala namak(black salt)
2 cups of water
Combine mint, corriander, green chilli and little water(10 -15 ml) and grind it.
Add tamarind paste, cumin powder, chat powder, black salt and whip it for few seconds until all are mixed.
in a bowl add water and stir in the grinded mixture to a thin watery sauce.
INGRIDEIENTS and Method or tangy chutney
Sweet or tangy water(chutney)
3/4 cup seedless tamarind
1/2 tsp cumin powder
1 tsp of corriander powder
kala namak to taste
Boil tamarind , dates in pan with 2 cups of water until it is soft.
Now add the jaggery to boiling mixture , boil it in simmer for it becomes thicker.
Add the spices and stir it well.
Once it is cooled blend it in a blender.
Add some water if its too thick , should pouring consistency.

METHOD
- Boil and cut potatoes into small cubes.
- Combine potatoes, onions, spices and sprinkle with coriander leaves.
- Arrange the puris in a plate, crack the puris on the top and stuff with the fillings.
- Serve the pani in two seperate bowl(spiced, sweet chutney)
- while eating add 1 or 2 spoons of water and eat it quickly , else, would get soggy.
