Rava idlis are easy and perfect for a lazy day, its so quick to make, no need for soaking rice+dal and grinding nor fermenting it. Rava idli is just combining semolina, yogurt, baking soda/ENO salt leave it for 20 minutes and you can pour it into idli maker and steam it for soft idlis.
Ingredients:
1 cup roasted semolina
1/2 cup yogurt
1 tsp of baking soda/ENO fruit salt
1/2 carrot grated
1 tsp of grated ginger
1/2 tbsp of oil
1 tsp of mustard
1 tsp of channa dal
pinch of hing
10-12 curry leavaes
1 cup of water

Ingredients:
1 cup roasted semolina

Method:
- heat the oil and roast the semolina till brown stirring well
- Crackle the mustard in the same pan, add channa dal, hing, ginger and curry leaves cook for 20 sec or till the channa dal becomes light brown.
- Now combine semolina, fried mixture, yogurt, salt, water and mix well , check for the idli batter consistency(Not too liquidity nor too thick , pouring consistency), leave it aside for 20-25 minutes.
- Meanwhile spray oil on the idli plates ( moulds like muffins tray).
- Add baking soda/ENO fruit salt to the batter ,and fold the batter gently.
- Pour the batter into the moulds , fill in 3/4 of the mould, as it would rise while steaming.
- Steam it for 5-7 minutes.
- Check the idlis with inserting a knife, it must come out clean.(like checking cakes), then switch off the idli cooker, leave the idlis to cool and scoop it out with clean spoon.
- Serve with chutneys.
