Kadai paneer

 Kadai paneer is a spicy accompaniments for roti, it can be made as gravy or dry version. Here I have made gravy for roti, its basically gravy with spicy masala(coriander,  garam, red chilli powder) and tangy tomato puree and onion, ginger.
                              

Ingredients:

           1 cup paneer
           1/2cup chopped vegetables(capsicum , peas)
            2 onion chopped
            4 tomatoes chopped  
            1 inch ginger
            2 garlic
            1 tsp of garam masala
           1 - 11/2 tsp of red chilli powder
           1 tsp of coriander powder
           1 tsp of kasuri methi
          1 tbsp of ghee/oil
           1 tbsp of cream

Method:

  •     Make ginger-garlic paste.
  • Blanch 3 tomatoes and puree it.
  • Heat the oil in the kadai , add the ginger-garlic paste, fry till it becomes brown, but dont burn it.
  • Add chopped onions and saute them, till brown.
  • Add 1 chopped tomato, cook for 1 minute.
  • Now tip in tomato puree, cook 2minutes stirring..
  • Tip in all dry masala(chilli powder, coriander powder, garam masala) cook for 2-3 minutes or till oil oozees out, in low flame.
  • Tip in the vegetables, salt.
  • Cook well till you get gravy consistency.
  • Before switching off add fresh cream, kasuri methi and switch it off.
