During Varalaskmi viratham and ganesh chathurthi we usually do this sweet for prasadam, its beleived that Lord Ganesh loves this mothak or kozukattai . Its a traditional festival recipe and loved by all, though its time consuming.
Ingredients:
1 cup rice flour
1 1/2 cup water
2-3 tsp of oil
salt to taste
For Filling:
1 cup of desiccated coconut
3/4 cup jaggery ( powdered)
1 1/2 tsp of cardamon powder
Method:
- Firstly , prepare the fillings .Combine desiccated coconut and powdered jaggery in a microwave safe bowl , microwave for 5 mins, stirring in between.
- Add the cardomon powder to the coconut+ jagery mixture and again microwave in low power for another 2 minutes stirring in between, remove when you reach the consistency(both should have combine well and should be able to make balls)like below.
- Make small balls of the fillings, and let it cool.
To prepare the outer cover/shell
- Heat water in a thick pan and add oil , salt to it.
- When the water starts to boil , tip in the rice flour
- Stir in well ,and switch of the flame, it must be smooth and without any lumps. If you think its too hard then sprinkle some hot water and stir in well.Shift the dough to cling wrap and seal it well.
