Jalebi /jilapi is a sweet made by deep frying ( maida) and soaked in sugar syrup , its a popular sweet in India, can be seen street vendors making jilapis. The round shape should come with practice, you coud have sen the vendors making jilapis in batches, they would be so swift and the rounds or pretzels they make will be perfect, unlike me, though I got same taste.
1 tbsp of corn flour
1/2 cup of yogurt
1 tsp of kesari color
2 cups of water
1 tsp of saffron
1 tsp of rose water
For sugar syrup, add sugar + water, saffron , stir well and switch off when you reach single string consistency .
Note:
Ingredients:
1 cup of maida flour1 tbsp of corn flour
1/2 cup of yogurt
1 tsp of kesari color
for Sugar syrup
1 1/2 cups of sugar2 cups of water
1 tsp of saffron
1 tsp of rose water
Method:
In a bowl combine flour, corn flour, yougurt, and sufficent water to make a smooth batter
- Add kesai color and beat well so there are no lumps.Leave it for fermentation for a day , not in fridge.
- Once it is fermented we can make jalebi. Pour it into ziplock pouch with end cut (small cut) or pour into the piping bag .
- Heat the oil , squeeze the piping bag to make round shapes, deep fry it until crispy.
- then soak in sugar syrup for 2 minutes and serve hot.
Note:
- If you dont have piping bag, you can use your old ketchup bottles.
- If you cant wait for fermenation, add 1 tsp of yeast to 1/2 cup of warm water and mix this with maida flour to make smooth batter and leave this for 15 minutes to raise and make jaebis
