Its basically marination of cottage cheese/paneer in yogurt and spices and cooked in tandoor, that's why the name, but it isnt necessary to have tandoor , we can cook with the available oven or just a grill pan.
Paneer tikka is different from tikka masala which s a gravy and the first one is dry, a starter. With the same maeination we can make potato tikka, cauliflower tikka, mushroom tikka, brocolli tikka , here I have used all the vegetables with cheese.
Ingredients:
1 cup paneer/cottage cheese
1 onion
1 red capsicum
1 tomato
1 yellowcapsicum
1/2 bowl brocolli flowerts
7-8 button mushroom
10 asphagarus
10 skewers
For marination :
3/4cup of yougurt/hung curd
2 tbsp of freshcream
1 -2 tsp of red chili powder
1 /4 tsp of turmeric powder
1 tsp of cumin powder
1 tsp of garam masala
1/2 tsp of chat masala
1 tsp of dry mango powder
1/2 tsp of ajwain
1/2 tsp of ginger powder
1/4 tsp of garlic powder
1/2 lemon juice
black salt
Method:
- Cut capsicum, onion, tomatoes into big cubes.
- Cut the paneer into cubes
- Cut mushroom into big pieces, brocolli into bit size florets . cut asparagus into small pieces and blanch it for 1 minute and drain extra water.
- Combine in a bowl ingredients in for marination.
- add all the veggies to the marination and leave it for 3 hours in the fridge.
- Then skewer the veggies and paneer alternatively in skewer stick
- Now spray oil on the skewers and grill it for 10 minutes, in betweenturn the skewers for uniform grilling.
- Notes:
- If your are baking it preheat the oven and bake at 150deg for 20 minutes.
- You can cook in the frying pan if you dont have oven or barbeque. Add 3-4 tbsp of non stick grill pan and keep skewers over and cook till its crispy and brown on both sides.
