Adai / lentil dosa/lentil crepes


Adai is a traditional recipe and is a complete meal, with proteins, carbohydrates , the accompaniment is mostly avial and jaggery, which is  veggies in rich coconut sauce. Adai is a crepe/ dosa made with lentils ( urud dhal, yellow spit dhal, moong dal,toor dhal) and equal amount of rice(raw rice/idli rice).


                             





Ingredients:
1 1/4 cup of rice
2/3 cup of yellow split dal
1/4 cup of toor dal
1/4 cup of moong dal
1 tbsp of urud dhal
1/4 cup of red shallots
1 inch ginger
3 red chilli
2-3 green chilli
2 tsp of asafotedia
3 sprigs of coriander leaves
2 sprigs of curry leaves
salt as needed


Method:



  • Soak lentils,ginger,chilli,asafotedia  for 2 hours in a bowl.
  • Soak the rice in a seperate bowl for 2 hours
  • Grind lentils, with 3 tbsp of water to a paste form.
  • Grind rice coarsely.
  •  Now combine both to make a  dosadough. Add chopped onions,coriander leaves, curry leaves.
  •                     
  • Heat tava and pour one ladle of dough and spread it like crepes.Spray oil , so it wouldnt get stuck to the tava.
                                
  • Flip it and cook till you get  both sides get brown spots, 
  • Serve with avial or jaggery.
