Drumstick leaves adai/ lentil crepes with drumstick leaves/Murunka keerai adai

In south India  in many dishes we use drumstick and its leaves, we saute it with onion as poriyal/accompaniments for rice, we add it to adai, thats what we are cooking today!! Lets begin...
                                         
                              

Ingredients:
2 cups of adai dough
1 1/2 of drumstick leaves
2 tbsp of coconut
3-4 shallots, chopped
2 inch jaggery
2 tbsp of oil

Method:

  •  Remove the leaves from the stem, see to that there are no small sticks/stems left over.
  • Cut the drumstick leaves after washing .
  • heat the skillet add the 3 tsp of oil ,once heat add shallots, saute it.
  • Now tip in cut drumstick leaves and whilst them.
  • Add the  whilst drumstick leaves, chopped coconut to the adai dough.
  •                         
  • Heat the tava , pour one ladle of the dough and spread it as crepes, but little thicker.
  •                            
  • Spray oil  on the adai, cook the adai by flipping it over till you get brown spots.
  •                                
  • Serve with avial or jaggery.
  •                               
Notes:




 Ladle the dough on the tava  and make like pancakes, not too thin.
Be generous with oil.
Always cook in medium flame, as it too thick it may not cook well, in the inside.
