Kambu dosa/pearl millet dosa

Sunday morning my son goes to surfing and mostly he has only cold breakfast , cereals with milk, and today I decided to give him hot breakfast , as he prefers dosas to idlis , I decided to make him kambu dosa.  Earlier  had soaked and grinded the pearl millet with  rice and fermented for 4 hours , so my task was easy to make dosas. Generally on weekends I would soak for 2 to 3 varities of dosas to grind, like kambu, ragi and normal urud  dosa, for pesarattu, as its easy to make them when kids are hungry .

Ingredients:
1 /2 cup kambu
1/2 cup raw rice
1/4 cup urud dal
2 red chilli
2-3 sprigs of curry leaves
10 red shallots
salt to taste

Method:

  • Soak and grind kambu, rice , dal, chilli to  a smooth dough consistency. Add salt  mix well and allow it ferment for 3 to 4 hours.
  • Chop shallots, curry leaves  add to the dough  before making dosas. Add water to the dough if its too thick , it shouldn't be too runny consistency either.
  • Heat the pan  , spray oil. Pour one ladle of dough and spread to make a round thin crepes or dosa.
  • Cook one side till brown and flip it and cook the other side too.
  • Serve hot with chutneys or sambar.
