I wanted to do a quick subzi for phulkas (for lunch). Got reminded of the Ladies finger lying in the fridge for about 2 days now. So i quickly washed them and chopped in 1" size (approx). Thats all i did to be frank. Rest was just adding the masalas. It was ready in less than 10-15 minutes.

Ingredients :
- Bhindi / Ladies finger - 1/4 kg
- Asafoetida - 1 pinch
- Turmeric - 1/4 tsp
- Kashmiri chilly pdr + medium hot red chilli pdr - 1 tbsp
- Rice pdr - 1 tbsp (optional)
- Salt - To taste
- Oil - 1 tbsp
Method :
1. Wash the ladies finger and cut into 1" pieces and set aside
2. In a kadai, add oil and when its med-hot add the okra and toss it
3. Add asafoetida, turmeric, chilli pdrs, salt and stir well
4. Toss it now and then so that the spices blend in
5. Cook it on a medium flame until the okra's colour changes from bright green to darker shade. To check if okra is cooked, pierce the okra with a knife. It should slide in easily, soft and come out clean
