Ridge gourd/Loofa is a tropical plant( a climber) and its consumed when its green, its highly fibrous. Its a common vegetable in India and cooked as chutney, kootu, or deep fried fritters.
As I had a small veggie garden,was very eager to grow loofa, as I love loofa chutney/thuvayyal, but had to wait for spring ,as the plant is tropical it requires more sun, was happy when I saw my first loofa in my garden, long bright green.
Ingredient:
500 gms of ridge gourd
1 tbsp of urud dhal
2 tsp of toor dhal
2 dried red chilli
1/2 tsp of hing
1 tsp of oil
salt to taste
Method:

- Scrap the skin(don't peel the whole skin) only the spiky skin and chop the loofa/pirkankai/ridge gourd
- Heat the tava dry roast urud dhal, red chilli, till light brown.Now add hing and toss a little.Remove from the heat, transfer it to the mixie jar/ blender.
- In the same tava, add oil , tip in the loofa/gourd and toss it well. Sprinkle water and cook for a minute till it becomes tender.
- Remove from the heat , transfer to the jar, add salt.
- Once the loofa is cooled , grind it coarse .
- Serve with hot rice or it can be used as spreads.
