Rajma Ki Subzi / Kidney beans Masala Curry

Rajma also popularly called as Kidney Beans is a great source of Protein, magnesium, iron, Potassium and vitamin B1. Hence this is a good meat substitute for vegetarians. Owing to its various health benefits, rajma / kidney beans are considered to be one of the best legumes for everybody. 


The good thing about this is one can store this for 12 months tension-free. But at the same time, Gout and kidney stones patients must avoid excess consumption of kidney beans as it might disrupt cellular metabolism. 
I use it once in 2-3 weeks as a curry, or rajma ke Chawal (Rajma Rice), rajma masala as an accompaniment to roti/phulkas. Trust me its very sumptuous and filling. As it is rich in dietary fiber, its very healthy for kids. You can mix it in their sandwich too. Like you can make sprouts sandwich, rajma tortillas, adding a twist to the recipes so that kids like it. 

Ingredients : 

Rajma / Kidney Beans : 1 cup (wash and soak it overnight in water) 
Tomatoes - 2 big (chopped roughly)
Onions - 1 big (chopped)
Ginger-garlic paste - 1 tbsp (freshly ground)
Turmeric pdr - 1 tsp 
Red chilly pdr / Kashmiri chilly pdr - 1 tbsp (i used combination of both for the colour and the hotness, you can adjust acc to your spice levels) 
Garam masala - 1 tsp 
Coriander pdr - 1 tsp 
Amchur pdr - 1 tsp or 1 tsp lemon juice 
Salt - to taste 
Oil - 1 tbsp 

For Tadka : 

Cumin seeds - 1/2 tsp 
Curry Leaves - 1/2 sprig 
Green chillies - 2 (slit lengthwise)  
Coriander / spring onion leaves - for garnish 

Method : 
  1. Wash the rajma in running water and soak it overnight. It will puff in size
  2. Pressure cook the rajma for about 4-5 whistles in a cooker and keep aside 
  3. In a pan, add oil. When its hot add curry leaves, green chillies, cumin, add chopped onions and ginger garlic paste. Let the raw flavour pass
  4. Add the chopped tomatoes and toss it
  5. Add turmeric pdr, coriander pdr, chilly pdr and mix well 
  6. When the tomatoes are cooked 3/4 th its time to tip in pre-cooked Rajma with little water with which it was cooked
  7. Add salt, Amchur pdr, garam masala and mix thoroughly
  8. Garnish with coriander and serve hot with rotis, rice etc 


P.S : i have used smaller size of rajma. You could use the slightly bigger / bigger rajma. Everything tastes great when had hot.
