Ragi known as "kezhvaragu" in tamil, Nachni in Hindi and known as Finger Millet or red millet is said to have high protein and rich in fibre and less fat in it.
The major benefits of consuming ragi on a regular basis is that it promotes weight loss, increases bone strength, controls diabetes, reduces cholesterol, Aids in relaxation, Treats Anaemia, Helps in digestion, Increases Lactation, Reverts Skin ageing, etc
My husband's aunt prepares this for dinner twice a week for Diabetes people in our family and she passed on her recipe to me. She is indeed great in cooking authentic south indian, traditional food and brings back old & forgotten recipes to the table. She always says "Its what we cook that matters and contributes to health".
Lets get to the recipe.
Ingredients :
Ragi Flour - 1 cup
Rice flour - 1/2 cup
Onion - 1 (Finely Chopped)
Cumin / Jeera - 1/2 tbsp
Green chilly - 1 (finely chopped)
Curry Leaves - 1/2 sprig (roughly chopped)
Salt - as needed
Asafoetida - 1 pinch
Water - to mix into a thin batter (like rava dosa batter)
Oil - to cook the dosa
Method :
1. In a bowl, add all the ingredients and add water little by little.
2. Mix well into a smooth paste and ensure there are no lumps
3. Prepare the batter into a thin consistency, pourable over the pan. It should be like rava dosa batter. and neither too thick or nor too thin
4. Heat and grease the pan and pour a ladleful of batter randomly. You might not be able to spread this like regular dosa, pour a teaspoon of oil around the dosa and allow it to cook. And flip it the other side and cook the same way
5. Serve it hot with a chutney / sambar of your choice. The best accompaniment is garlic+milagai podi (gun pdr) mixture
