Kambhu Koozh / Pearl millet Porridge

"Kambu" also known as Pearl millet in english and "Bajra" in Hindi. I was inspired to try out our authentic olden days recipes as they are forgotten in Today's fast food world. It is known to cool the body especially duirng hot summer. I was waiting to post this recipe to my wonderful readers as the summer has begun and i hope this might help you all.



Despite its high nutritional value, it has long been considered a poor man's food. Now it has made a come back due to the growing awareness about millets. Bajra is non glutinous and is full of vitamins and minerals. It is also rich in proteins and fiber. Being rich in fiber, it helps in weight loss as it keep you fuller for a longer time. It is indeed a time consuming process of making this, but i chose the shortcut method to prepare this in pressure cooker as instructed by madam sharmila in her website. 

Ingredients : 


Kambu / Bajra - 1/2 cup (I used broken kambu) If you use whole kambu, you can pulse it in the mixie and use, this way it is easier to cook. 

Buttermilk - 1 cup (Chilled - optional)
Water - 3.5 cups
Salt - to taste

Method : 


1. Wash the pearl millet / kambu thoroughly and drain the excess water. Let it sit there for about 15 minutes. 

[You can pulse the whole millet even after washing & soaking. It will look like this] 

2. Now transfer this to a pressure cooker and add water. Pressure cook it for about 4-6 whistles 
3. When the pressure releases, open the lid and switch on the flame. Keep stirring until the water is absorbed and the mixture turns thick enough to roll into a ball. Turn off the gas & Let it cool down. Roll into lemon sized balls


4. Immerse these balls into a vessel containing drinkable water and refrigerate for 2 hrs or overnight. 

5. Mix it well without any lumps before using the next morning. I used my whisk
6. To this, add buttermilk and salt. Give it a quick stir
7. Serve with raw small onions, pickle or vadams or green chilies or moar molaga of your choice.
