Kurkuri Bhindi - as the name suggests is a yummy crunchy snack/appetiser made from thinly sliced bhindi. This is a very easy and a winning dish from the kitchen when served hot right from the pan.
My sister saw this recipe in Zee Khana Khazana and insisted i make this for her. She was here for her vacation. And we loved eating it with adrak wali chai in the Mumbai monsoon sitting by our home's french window with peppy songs, wow we had a great time.
Lets get to the recipe.
Ingredients :
Lady's Finger/bhindi/okra - 1/4 kg (thinly cut, slice the bhindi vertically into thin pcs)
Besan/gram flour - 2 tbsp
Red chilly powder - 1 tsp
Turmeric powder / haldi - 1/2 tsp
Chaat Masala - 1/4 tsp
Amchur powder - 1/4 tsp
Jeera powder - 1/4 tsp
Garam Masala powder - 1/4 tsp
Salt - to taste
Oil - for frying the bhindis
Method :
1. Wash and pat dry the lady's finger completely. Then slit the bhindi into 4-5 pcs
2. In a wide mouthed bowl or thali plate, spread the okra and add the masalas except besan flour
3. Gently mix the spices to the okra and toss it well
4. Once the msalas are coated add the besan flour and gently mix. Ensure that the okra is evenly coated
5. Marinate the mixture and leave it aside for 15 minutes
6. Heat the oil in a pan, add the okras when oil is boiling
7. Toss it immediately and cook in med-high flame. Within 10 seconds it will get cooked
8. Remove in a paper towel and drain the excess oil
You could also sprinkle some kala namak, or chaat masala and serve
Serve Hot with Chai, coffee or as an appetiser with rotis and Curd
