Dhudhi Halwa / Bottle Gourd Halva - a sweet confection

It is a sweet indian dessert made from Bottle gourd. Its is Lauki in hindi and dhudhi in marathi. We had at a Rajasthani thali restaurant a few days back and i was really inquisitive how they make this Halwa. I was super curious that i asked the restaurant manager if i can get the recipe from the sous chef. i do not think he gave the exact recipe of the restaurant, but he did give me the usual procedure and i was quite thankful for it.


Lets see the recipe !!

Ingredients :

Lauki/Dhudhi/ bottle gourd - grated dhudhi 3-3.5 cups
Milk - 1/2 litre (boiled and cooled)
Sugar - 7 tbsp
Ghee or clarified butter - 3-4 tbsp
Cardamom - 4-5 crushed and powdered
Dry fruits like cashews/raisin/almonds - a handful

Method :

1. In a kadai pan, combine milk and grated lauki or bottle gourd
2. Bring the whole mixture to a boil then simmer the flame
3. Simmer and cook the mixture, stirring in between
4. Slow cook the lauki in milk until the milk reduces and dhudhi becomes soft
5. When the milk is 75% reduced/evaporated add the crushed cardamom powder, cashews raisins and almonds
6. Add ghee to the mixture when all the milk has evaporated and allow it to cook for a minute
7. Lastly add sugar and mix the halwa well
8. the sugar will melt and the halwa will become a little liquidy
9. Cook the lauki halwa for a few minutes. Do stir it often ensuring it doesn't stick to the base
10. When you know by looking at the lauki halwa that the consistency is just right, turn off the gas
11. Serve dhudhi/lauki halwa hot or cold according to your preference
