Kadai panner

KAdai  is a traditional vessel / utensil , a deep frying pan , as  the name suggests ,this recipe is cooked in it and good accompaniment of ROTI, Rice. Paneer is cottage cheese made from cow milk by adding lemon juice or vinegar and seperating the milk solids from whey, and milk solid/curd is then wrapped in a cloth and rested under a tava to strain extra liquid and then cut into cubes(paneer).

                                         
Ingredients:

200 gms paneer cubes
2 tbsp of oil
1 tbsp or blop of butter
3-4  large tomatoes depending on the size
1 small capsicum
1 large onion
 1 green chilli
1/2 tsp of ginger-garlic paste
1/4 tsp of  garam masala
1 tsp of kasuri methi

KADAI MASALA
1 tsp of coriander seeds
1/4 tsp of black pepper
2-3 kashmiri chilli
1/4 tsp of garam masala

Method:
                                 

  • heat the tava dry roast coriander seeds, black pepper, kashmiri chilli, transfer the content to mixie jar or blender and tip in the garam masala and blend it into coarse powder.
  • In a the tava heat the oil, add the finely chopped onion and fry until golden brown.
  • Add the ginger-garlic paste , green chilli and fry till raw smell disappears.
  • Now add the cut tomatoes, cook till its mushy or till oil oozes .
  • Now add the cut capsicum cubes, and toss it well.
  • Add the kadai masala, garam masala and cook in simmer  , check it touches the bottom , add 1/2 cup of water and cook well for 3-4 minutes
  • Add kauri methi , stir well.
  • Lastly add the paneer cubes.
  • While serving add blop of butter and sprinkle the coriander leaves.
