Brinjal capsicum rice is similar to vangi bath.
Ingredients:
Rice: 1 1/2 cups
Brinjal : 250 gms(chopped)
Capsicum(green) :1cup chopped
Onion : 1 cup(chopped)
For the Masala:(grind and pound)
White sesame seeds: 1 tbsp
Urud dhal : 1 tbsp
Channa dhal : 11/2 tbsp
Cinnamon stick : 1 tsp
Corriander seeds : 3tsp
redchillies 8 nos
Cloves 2
cardomon 1
Fennel seeds 1 tbsp
Method:
Cook the basmathi rice seperately, for cup of basmathi rice you need 2 cups of water.
Slice the onion, capsicum, eggplant lengthwise.
Heat the oil in the kadai and add mustard,
.Now add onion after it becomes soft add eggplant and add capsicum, once it is cooked tip in corriander powder ,salt and masala powder and cook for few minutes.
Atlast mix with the cooked rice.
Garnish with corriander leaves and onion raita
