Radish is an easily available vegetable in most parts of India also known as Mooli. It has a variety of health benefits & can aid in curing jaundice, Piles, urinary disorders, skin ailments, kidney disorders etc.; also radish helps in weight loss as it is very filling. Can be used to make parathas (Indian bread)
Radish Sambhar is easy to prepare & a tasty south Indian accompaniment. In this recipe I used 2 tomatoes as I like them in the Sambhar (you can also skip the tomato, its optional).
Ingredients:
Radish : 1 cup (approx 1 big radish cut into pieces)
Tomato : 2 small diced into medium pieces
Fenugreek seeds : 1/4 tsp
Tamarind juice : 2 cups (soak tamarind in 1 cup water for 10 minutes, strain the juice & repeat the same until all the juice from it is extracted)
Toor dhal (Indian lentil) : cook it until done in a pressure cooker for 10 mins
Sambhar powder : 2 tbsps (Available in all Indian stores, or it is easy to prepare at home also. I will give its recipe in my next post)
Turmeric powder : 1/2 tsp
Salt : To taste
Tempering :
Curry leaves : 1 sprig
Coriander leaves / cilantro : 1/2 sprig
Mustard seeds : 1 tsp
Hing : 1/2 tsp
Oil : 3 tbsp
Method :
1. Dice the radish & tomatoes in separate bowls
2. Soak tamarind & extract its juice
3. Heat the Kadai, add the ingredients listed under "Tempering"; add the chopped radish and fry for a less than a minute.

4. Add the tamarind juice, to it add turmeric powder, sambhar pdr, and tomatoes
5. Allow it to boil and check the texture of the radish to ensure that its cooked (prick on the radish with a tooth pick, if it goes in easy & comes out, then its cooked)
6.When you see bubbles in sambhar, its time to add the cooked toor dhal. Let it cook for another minute or two.
7.Finally add salt & serve hot.
