Sabudhana / Sago Kichdi

Sabudhana (or) Sago Kichdi is a Maharashtrian recipe (snack), my aunt taught me this while she was fasting (vrath). This is usually taken while fasting as this dish is very sumptuous and filling.

Soak the sago for 2-3 hours prior to preparation. The duration of soaking will be longer if you are using the small variety of sago. The texture of the sago will should look like the pic below. It should look like this, all puffed up & when you press it, it should mash. there you go !!

Soaking time : 3 hours
Preparation time : under 20 minutes

Ingredients :
Sago :  1 cup
Ground nuts (roasted & coarsely ground) : 1/2 cup
1 medium sized potato : boiled & partly mashed
Cumin seeds : 1/2 tbsp
Mustard seeds : 1/2 tbsp
Bengal gram : 1/2 tbsp
Green chillies : 2 medium size (adjust according to your taste)
Pinch of turmeric powder (optional during fasting)
Asafoetida : 1/4 tbsp (optional during fasting)
Salt : To taste
Oil : 3 tbsp
few sprigs of curry leaves & Coriander for garnishing
Lemon Juice : 1/2 - 1 tbsp (acc to your taste, optional)

Method :

1. Mix well the turmeric & salt to the soaked Sago & keep it aside.

2. In a deep bottomed pan, add oil & when its hot enough add the mustard seeds, let it splutter. To it add the cumin seeds, bengal gram, asafoetida, curry leaves, green chillies & sauté.

3. Add the potatoes. Then add the sago mixture to the pan, let it cook for 4-5 minutes. Add the coarsely done ground nuts & give it a quick toss. Allow it to cook for another 3-4 minutes.

4. Turn off the heat, add the lemon juice & Garnish with coriander. serve hot.
