Thai soup




Ingredients:
1/4 cup mushroom
1 carrot thinly sliced
1/4 cup  of brocolli heads
1/4cup of beans cut lenghtwise
2 tbsp of ginger cut lengthwise
1 tbsp of finely chopped galangal
1 lemon grass chopped
3 kaffir lime  leaves
 1 tbsp of coriander roots
3 shallots
3 cloves garlic, finely chopped
2-3 dried red chilli
1 tbsp of oil
1 litre of stock

Method:

  •  Finely chop galangal,shallots, garlic and lemon stalk
  • Remove the vein of the 2 leaves, cut the coriander roots.
  • Now in a grind the above all to a paste.
  • Boil the stock and add the curry paste and boil for 2 minutes and strain it.
  • Heat oil in a wok add the mushroom, carrots, brocolli saute for a minute.
  • Now add the Flavoured stock. Add in the ginger, lemon stlk and 1 chopped kaffir leaves.
  • Boil it for a minute , till the veggies are cooked , al dente.
Serve hot.
