Corn fritters

Serves: 8 fritters

Ingredients:
3/4 cup  plain flour
2 eggs
1 cup corn kernels
3 shallots chopped finely
1/2 tomato chopped
1/2 cup milk
1/2 lemon juice
salt and pepper according to taste
olive oil spray

Method:


In a large bowl whisk egg yolk, lemon juice.Add milk to it beat gently.
Now add sifted plain flour, corn kernels, salt, pepper, shallots, tomato to the yolk mixture.
In a bowl seperate egg white and whisk it until soft peaks,then gently fold in corn mixture.
Heat a non-stick pan and spray oil, pour in one heaped ladle of mixture on the pan.

Cook for 2-3 minutes or until bubbles appear.Flip and cook the other side till it turns light brown.

Serve with dipping sauce or spreadable butter.
