Carrot cup cake



My carrot cupcake was hit at my residence,  unlike my son my daughter doesnt like carrots, so I decided to give it many different forms like carrot cake, dahi carrot(like tzatziki).. Before I could frost it my daughter started eating it.


Ingredients:

carrot: 1-2(1 1/2 cup)
 eggs: 2
 self-raising flour: 1 cup
 sugar: 1/2 cup
butter+oil: 2/3 cups
cinnamon: 1 tsp

Frosting:

 2 cups of cream cheese
 1 cup unsalted butter
 1 tbsp of vannila essence
 3 cups confectioners sugar

Method:

  •  Preheat the oven for 15 minutes
  • Sieve the flour, cinnamon 
  • Separate egg white, yellow
  • Beat the egg white until soft peaks.
  • Beat egg yolk with sugar, butter+oil until creamy.(If you wish you can add only oil)
  • Grate the carrots and and add to the egg yolk mixture.
  • Now fold in egg white . Then fold in the flour gently, don't whisk it.
  • Pour it evenly in the muffin tray which is already  greased.
  • Bake it for 15-20 minutes at 180 deg , fan forced.
  • then cool them on the wire rack , for frosting.
Frosting:
 Combine cream cheese and butter and whisk(beat) it until  smooth .
 Add vanilla essence.
  While beating in medium speed ,Add sugar little by little .Whisk all until smooth and creamy.
  Frost them on the cooled cup cake, enjoy yummy cake.
