Melitzana /Eggplant bake

    Its also  a greek dish which I mentioned earlier the eggplant recipe,  its a easy eggplant receipe.
                 


Ingredients:

  1 egplant (big one)
  2 tbsp of olive oil
  2 onions: chopped
  2-3 cloves garlic
3 tomatoes chopped
 1  tsp cumin
 1 tsp of mixed herbs
 2 tbsp of parsley, chives finely chopped
 salt, pepper to taste


Method:



  •  Preheat the oven for 10 minutes 
  • Cut the eggplant lengthwise and brush with olive oil and grill it (roast it) in the oven for 10-15 minutes at 180deg or until cooked.

  • Let it cool in the wire rack for few minutes
  • Meanwhile, heat olive oil in the pan add cumin, add onion and saute it.
  • Add  garlic , mixed herbs
  • Now once its cooled  scoop the flesh from the eggplant, leaving the shell for filling.
  • Add the scooped flesh to the pan and cook for 1-2 minutes , stir well.
  • Add the tomatoes, salt, pepper  and cook until raw smell disappears.Add the parsley, chives.
  • Now add the mixture to the eggplant shell , and bake it for 15-20 minutes at 180 degrees.
