It was raining today, pouring so much and I didn't really want to cook something elaborate , so decided to make a soup which is filling and decided on this one. Pumpkins comes in many varieties, butternut squash pumpkin, kent, Golden nugget , so you can use pumpkin of your choice. In pumpkin soup I have used curried powder , Cayenne pepper to make it spicy .
Ingredients:
500gms pumpkin
1 onion , chopped
2 garlic pods, cut
1 tsp curry powder
1/2 tsp corriander powder
1 tsp cayenne pepper/ black pepper
1 tbsp of butter
4 cups of stock
salt to taste

Method:
- Peel the pumpkin and cut it into cubes.
- Melt the butter in a sauce pan fry onion, garlic till translucent.
- Add the pumpkin and toss it well.
- Add the curry powder, coriander powder and stir well.Add in the stock and cook for 20 minutes or till the pumpkin becomes tender or soft.
- Tip in salt, cayenne pepper to the boiling soup, cook for a minute and (switch it off) let it cool.
- Puree the soup , and heat it again in the saucepan for a minute in simmer, stirring it. .
- Serve hot with roasted bread .
