Spanakopita/spinach pie

We went to   greek restaurant the other  day and ordered spinach pie and a dish with Eggplant and liked the spinach one  very much and that recipe us here for you guys..Spanakopita is authentic greek pie cooked with spinach and cheese spread in  filo/phylo sheets and baked for 15 minutes.





Ingredients:
 filo sheets : 6 sheets
 spinach 150 gms
 corn kernels: 1/4 cup
 onion : 1

 garlic:  pods
 olive oil : 1 tbsp
 goats cheese(feta): 100g
 ricotta cheese : 100g
 pepper to taste
 melted butter: 1/2 cup


Method:

     
       Preheat the oven at 200 deg for 10 minutes , fan forced

  •   Heat olive oil in a pan and saute the onion, garlic.
  • Now add chopped spinach toss it, wilt it Now tip in the corn kernels.(squeeze the extra liquid oozing from the spinach)
  • Crumble the feta, ricotta add it to the spinach mixutre.
  • Now lay the  filo pastry  sheet and on the board and generously  brush melted butter on the sheet
  • .
  • Place on more sheet on the top of the earlier one, again brush butter over it.





    • Repeat the process for 5 sheets. Then place the spinach mixture on one edge and close it with one or two more filo sheets  and roll it up.
    • (coilt it or leave it as such )
    • Bake it on the oven at 180 deg for 15 minutes.
