Blueberry muffins

Blueberries are high in micro nutrients and its rich in fiber and magnesium, studies say that it may contain resveratrol.  We can make use of blueberry for different recipe such as jams, in tarts, in muffins, cakes, wines.

 Muffins are easy to prepare, if you would like to have sweet tooth, muffins are quicker to prepare, its just mixing dry ingredients with wet and baking it in muffin tins.Here have made scrumptious muffins using blueberry for the kids.

                       

Ingredients:

1 cup blueberry
1egg
1 egg white
1 1/2 cup self raising flour
3/4  castor sugar
1 tbsp of castor sugar+ cinnmon
1/2 tsp of salt
1/2 cup milk
125 ml of  oil
1 tsp of vanilla extract


Method:






  •  Preheat the oven at 200 deg for 15 minutes.
  • Grease the muffin tin with butter or you can use muffins cup, if so place one muffin cups on the muffin tray.
  • Combine sugar, flour,salt in  a mixing bowl.
  •                                
  • In another bowl add egg + egg whit and beat lightly.
  • Add oil, vanilla extract then lineup with milk  to the egg and whisk it lightly.
  •                               
  • Now add flour to the wet mixture and fold it.
  • Tip in berries and fold it.
  •                                
  • combine 1 tbsp of sugar and cinamon powder.
  • Pour it in muffin tin , sprinkle it with sugar and bake for 15 minutes at 200 deg.
