Couscous- couscous salad with roasted vegetables

Couscous is milled drum wheat, Couscous is  Morocco, middle-east cuisine , couscous is healthy and easy to cook , just have to steam it for 2-3 minutes and its ready for serving. Its generally served with vegetables, meat or chicken with herbs and nuts.
                         
Ingredients:
 1 cup couscous
 1 tsp of cumin powder
 1/2 cup of chopped ,steamed vegetables(carrot,beans,capsicum)
 1 tbsp of chopped lettuce
 salt to taste
 2 tsp of olive oil

Method:

  •  Heat a saucepan with olive oil, add the veggies, toss it with salt,cumin powder , stir fry them.
  • Meanwhile  , in a pot add enough water for cooking couscous , once it reaches boiling point add  couscous to it and cover the pot. Leave it for 3-4 minutes or until it becomes soft.
  • Drain extra water from couscous.
  • Combine couscous ,veggies,crunchy lettuce and serve it.
  •
