Murunka keerai poriyal/drumstick leaves saute

South Indians use drumstick in all possible ways, its leaves too, as its a anti-oxidant, rich in minerals and vitamins.

                         
 
Ingredients:
 3 cups drumstick leaves,
 1 cup shallots , chopped
 3-4 red chilli
 1 tomato
 1/4 cup toor dal, boiled and mashed
1 tbsp of oil
1 tsp of mustard seeds
1 tsp of urud dal
salt to taste

Method:
                         
  • Clean and remove the leaves from the stems and steam it.
  • Pressure cook toor dal/lentil and mash it.
  • Chop onions,tomatoes
  • Heat the oil in a skillet add mustard seeds, after it splatters,add urud dhal, fry it well.
  • Add chopped shallots saute it well,then chilli,tomato.Cook well for a minute.
  • Now add the leaves, salt and cook it for a minute or till raw smell disappears.
  • Now add the mashed toor dhal and mix well, cook till all blends well,see to that it doesnt get burned, if so sprinkle some water.
  • Serve with hot rice.
