When you are hungry and you have less time , stir fry is the best option, just grab a wok and toss in some veggies ad peanut sauce, thats it, yummy and healthy stir fry is ready.
Ingredients:
1 cup brocollli florets
2 slit red chilli
1 zuccini ,cut
1 small red onion , cut
1/2 red capsicum cut
1/2 yellow capsicum
2 garlic, chopped
2-3 tsp of sesame oil
salt to taste
For peanut sauce
2-3 tbsp of peanut butter
1 tbsp of water
1 -2 tbsp of coconut cream
1 tsp of gralic powder
1 tsp of soy sauce
1 tsp of oyster sauce
Method:
- First for peanut sauce, combine peanut butter and water in a microwave safe bowl , cook for 30 seconds, the butter would become soft and creamy.
- Now add soy sauce, garlic powder and coconut cream and whisk it , till are combines and microwave for another 40 seconds,
- In a wok add sesame oil and swirl them , when its warm add onion, garlic,chilli stir fry them.
- Now add in brocolli fry them for a minute.
- Tip in zuccini, capsicum stir fry , season with salt and cook till veggies are softened.
- Now pour in the sauce and cook for 2 minutes till veggies and sauce combines, serve them with jasmine rice.
