Roti rolls


Daily packing meals for kids is a big challenge.Oneday I was really tired , but I had the earlier day roti and some pinto bean masal, so I decided to pack the same with a small twist in it...


                                   




Ingredients:
3-4 roti/tortilla wraps
1 cup rajma /pinto beans masal
1 tbsp of grated cheese
50 gms of baby spinach leaves


Rajma /pinto beans masal
1 cup rajma beas
1 onion
2 tomatoes
1 tsp of ginger-garlic paste
1 tsp of  cumin powder
1 1/2 tsp of red chilli powder
 salt as required
 1 tbsp of oil


Method:

  • Steam cook the beans
  • Heat the oil add onion(chopped) cook till translucent.
  • Tip in ginger-garlic paste cook for a minute then add diced tomatoes , cook till oil oozes..
  • Add the dry masala , salt stir well  cook in simmer for 1-2 minutes.
  • Add the beans , cook till all blends well, mash it .
  • Heat the roti /tortilla wrap in crepe pan .
  • Spoon in a mashed bean masala, top it with cheese , spinach leaves(2-3 leaves for each roti)and wrap it or roll it.
  •            
  • Cut it into three pieces and pack it for lunch.
