Vegetable rice

Many kids are choosy  and fussy eaters, its always difficult to cook for them and to make them eat esp. healthy food, so I decided to  make this quick and easy recipe with rice and vegetables.
                               

Ingredients:
 1 1/2  cup basmati rice
 1 cup vegetables finely chopped (carrot,beans,capsicum,celery,cabbage shredded, spring onion)
 1 onion finely chopped
 1 tsp of garlic garnules
 1 tbsp of butter
 1 tbsp of  oliveoil
 2 tsp of  whitepepper
 cheddar cheese
 salt to taste

Method:
                                

  • Wash and cook the rice in 2 cups of water.
  •  Meanwhile, heat in a skillet butter +oil add onion, cook till translucent.
  • Now add garlic garnules,carrot,beans and cook them for few seconds.
  • Tip in the other vegetables and sir fry them, dont overcook them as they will loose crunchiness, add
     pepper,salt.
  • Once the vegetables are cooked , tip in the cooked rice and TOSS them well, dont stir them too much.
  • While serving grate some cheese over the rice and serve with tomato sauce.
