Urulai kizhangu kaara curry / Spicy Potato roast

Potato is my favourite vegetable, so for my hubby too. I totally love to have it with small onion sambar, white rice some ghee on top and the spicy potato roast... sluurrppp !!
I quickly made this one night when i was having potato cravings.

Ingredients :

Potato - 1/4 kg (cut into cubes)
Turmeric - 1 pinch
Red Chilli powder - 2 tbsp (if you are using kashmiri chilli pdr then - 3 tbsp)
Jeera - 1/2 tsp
Coriander powder - 1/2 tsp
Besan flour / gram flour - 2 tsp
Salt - to taste
Cooking Oil - 2 tbsp
Mustard - 1/2 tbsp
Hing - a pinch
Coriander - for garnish

Method :

1. Wash and peel the potato. Cut into cubes and soak in a bowl water. Keep it aside
2. Heat cooking oil in a pan, add the mustard and let it splutter. Add the jeera & hing
3. Add the potato cubes and mix well. Keep in low flame
4. Add coriander powder, red chilli powder, turmeric & toss it
[I used a traditional pan, hence used 2 tbsps of generous oil. If you are using a non stick 1 tbsp of oil would be sufficient]
5. Roast it in low flame, ensure that you do not mix it often and mash it up.
6. Once its cooked, sprinkle besan flour and tos it gently. Besan flour will roast it evenly.
7. Garnish with coriander and serve hot.
