Badam kheer

  Badam drink is a favourite for most in south    next to Rose milk, most of the restaurants serve this,either hot or cold. This was a on my bloglist for many days, finally I made it last week for Tamil New year.

Ingredients:
 2 cups of badam/almond
 1 cup of  brownsugar
 1/4 carrot
 pinch of saffron strands
 2-3 cardamon
 1 litre milk
 1 tbsp of chopped pistachios


Method:


  • Soak almonds in a cup of water for an hour.
  • Soak saffron in 2 tbsp of milk
  • Boil one  litre  milk and reduce it to 3/4 litres. 
  • Peel the almonds skin, and grind the almonds , cardamon  to fine paste.
  • Chop the carrot and cook them in water or milk and puree them.
  • Add pureed carrot to the milk and stir it in low flame for a  two minutes  .
  • Now add the almond puree and  soaked saffron milk discarding saffron strands.
  • Cook  stirring it well, in low flame without bottom   getting burnt.
  • Tip in sugar and stir well, till it dissolves and switch off(in low flame).
  • Now its ready to serve, garnish with chopped pistachios.
