Handvo

Handvo is a gujarathi  lentil and rice with vegetables, usually bottle gourd, cake baked or cooked on tava. Its a gluten free and no oil recipe.
 

                                               

Ingredients:
1 cup of rice
1/4 cup toor dhal
1/4 cup channa dal
1/4 cup moon g dhal
1/4 cup masoor dhal
1/2 cup curd
3/4 tsp eno salt or fruit salt or baking powder
1/4 tsp turmeric powder
1/2 tsp ginger-chilli paste
1/2 tsp red chilli  flakes
1/4 tsp cumin powder, coriander powder
salt to taste

Tempering:
11/2 tsp of oil
1/4 tsp of mustard seeds
1 tsp of sesame seeds
1/4 tsp of hing

             






Method:

  1.  Soak the lentil , rice for 5-6 hours .
  2. grind it well to a dough with chilli flakes, ginger-chilli paste.
  3. Now add coriander powder,cumin powder, turmeric powder, curd,salt and mix well. Rest it  10 hours for fermentation.
  4. Once it is fermented add in eno salt,  and tempering.( heat oil in a kadai splutter mustard, tip in sesame seeds, hing and curry leaves)
  5.                                          
  6. Pre-heat oven 180C and bake it for 25 minutes, depending on your oven(Check Inserting a skewer, tip should come out clean)
                                                  
  1. For  cooking in a tava, heat oil in tava , add tempering . pour the batter for a inch thick and keep lid on , cook for 2 minutes in low flame, flip it in the lid and cook the other side.
