Khichadi is a gluten free, a one pot meal, with veggies, rice and dhal with less oil and less spices. This khchadi is one of my bro's favourite dishes and I dedicate this post to him, as it was on my list of posting and finally got time to post it.
Ingredients:
1 cup of rice
1/2 cup of split green gram
1/4 cup potato
1/4 cup carrots
1/3 cup peas
2 star anise
1 inch cinnamon stick
2 bay leaves
3-4 red chilli(according to taste)
1 tbsp oil
salt to taste
pinch of hing
1 sprig of curry leaves
Method:

Method:
- Wash and cut the vegetables.
- Heat oil in a slow cooker add cinnamon stick,bay leaves, star anise,chilli, add veggies and saute them well.
- Add hing, sprig of curry leaves saute them.
- Now tip in rice mix it well with veggies, add split green gram dal , salt and just mix it .
- Now add sufficient water( atleast 4-5 cups of water , depending the type of rice used) and cook with lid in slow cooker or pressure cooker.
- Allow it cook for 3 whistles, open after the pressure reduces, serve with chaas.
